Navarro Farm is an award-winning coffee farm located in the lush remote district of Ka'u. We found out about Del and his coffee from a coffee friend of Big Island and we feel fortunate to have found such an innovative producer close to home. Pink honey processing involves anaerobic fermentation of the coffee cherries in sealed tanks, followed by drying the beans with their sugary pulp remaining on them. This impacts fruity and intensely sweet characteristics in the flavor profile. The Pacamara varietal originates from El Salvador. It exists through crossbreeding of the Pacas and Maragogype varieties, and is known for its high cup quality and marlge bean size.
