In the northern highlands of Sumatra this coffee originates in an area called Gayo. Coffee in Gayo is processed through wet-hulling, where both cherry skin and the parchment layer are removed before the coffee is fully dried. We like Sumatran coffees because they offer an extremely full bodied cup and low acidity. While we offer this in a medium roast, we find that dark roast lovers really enjoy this coffee.
